The Big Apple

Just back from NYC!

Peter and I went there to celebrate our anniversary.
What a great time we had! Saw many great works in galleries, uptown and downtown…
especially the Mapplethorpe Portraits at the Sean Kelly Gallery at 29th between 10th and 11th. Wow!

…went to A Chorus Line, again!
Here is a photo of me and the leading lady, Charlotte d’Amboise, who played Cassie.

She was fabulous! It was great talking with her after the show!
(Humm… I guess I had better start wearing some eye makeup)

Yummy!

Our favorite breakfast is Cranberry muffins and eggs! I know it is Monday already, but on Sunday morning we had our favorite breakfast. We had some special friends to enjoy it with which made it even more special! Here are my muffins and a recipe – in case you want to try them, too!

Kim’s Cranberry Muffins:

Preheat oven to 400 degrees. Grease bottoms only of muffin tin.

Mix in a medium bowl in this order:

1 egg
1/2 cup of canola oil (*or 1/4 cup of canola oil plus 2 Tablespoons of ground flaxseed)
3/4 cup 2% milk
1 cup of fresh (or frozen) cranberries cut in half (we stock pile the freezer at Thanksgiving)
1 teaspoon of fresh grated orange rind

Mix up well with a whisk, then add:

2 cups of flour
1/3 cup sugar
1 teaspoon of salt
3 teaspoons of baking powder

Mix with a wooden spoon just enough to make the dry ingredients wet.

*DO NOT OVER MIX- or your muffins will not be light and fluffy and disappear in record time leaving family and friends crying for more!

The oven should be ready by now, but make sure it is, the temperature for muffins has to be perfect! Once you put the muffins in, DO NOT, I repeat- Do not open the oven door to peek. They will not like it. This can make them drop. You want a nice top on the muffins, so stay out until your timer rings.

Fill the muffin tin (makes 12 muffins – regular size) with the mix and then sprinkle a little sugar over the tops of them. Immediately place them in the hot oven, set the timer for 18 minutes and go read the paper……

Ring.. ring…

Now check your muffins, they should be golden brown on top.
Remove them from the tin right away and serve.
Freeze any left overs, but don’t worry there will not be any left!

Please note* you can substitute apple (granny smiths) or blueberries for the cranberries.
It takes 30 minutes (if you’re organized) from start to finish.

March Snow

Well, March is finally here, and as usual it arrives here in Connecticut with gusto. We had 5 inches of snow here in the northeastern part of the state. My son is happy that his concert is cancelled- due to poor road conditions!!! So, we will set to work shoveling…..again! It is good exercise, right?

I am looking forward to going to the WPPI (Wedding and Portrait Photographers International) Conference in Las Vegas starting March 12th. Not only for the totally awesome programs and classes that are there, and all of the great vendors and old/new friends to meet- but, it will be WARM!!! I am very excited and getting my list of to do’s ready. It will be a shot in the arm to jump-start the coming wedding and portrait season!


Does anyone recognize this image? I took it last year at the WPPI conference. It is the beautiful glass roof at Bally’s/Paris casinos. I had no interest in casino life there, but the architecture and food was fabulous! It’s a fun place.
